INGREDIENTS:
- 1 pound tomatillos, paper removed
- Water, as needed
- 2 jalapeños, stemmed, seeded, and chopped
- 1/2 onion, chopped
- 1/2 cup cold water
- 1/2 cup chopped cilantro
- 2 teaspoons salt
INSTRUCTIONS:
- Cut the tomatillos in half and then place them in the pressure cooker. Add enough water to cover the tomatillos.
- Lock the lid into place; bring to high pressure and maintain for 2 minutes. Remove from heat and allow pressure to release naturally.
- Add the drained, cooked tomatillos, jalapeños, onion, and cold water to a food processor or blender. Blend until well combined. Add the cilantro and salt and pulse until combined. Chill the salsa before serving.
