Matcha is ground high-grade Japanese green tea with a floral and grassy flavor. This latte is velvety, sweet, and a gorgeous springy green hue. I highly recommend the Aerolatte milk frother, which costs about twenty dollars, for homemade lattes.

MAKES: 1 SERVING

INGREDIENTS:

  • 1 1/2 teaspoons strained matcha (1 teaspoon for a milder cup)
  • 2 tablespoons very hot water
  • 1 cup plain unsweetened cashew milk
  • 1 tablespoon plus 1/2 teaspoon agave nectar
  • 1/4 teaspoon vanilla extract

 

INSTRUCTIONS:

  1. WHISK together the matcha with the very hot water until mostly smooth (a few tiny lumps will remain).
  2. Meanwhile, heat the cashew milk in a 12-ounce mug in the microwave or in a small saucepan on the stovetop until very hot.
  3. SCRAPE the matcha mixture into the hot cashew milk.
  4. Add the agave nectar and vanilla.
  5. Froth with an Aerolatte or other handheld battery-powered milk frother until very frothy.
  6. Serve immediately.
