Matcha is finely ground high-quality Japanese green tea with grassy and floral flavor notes. Whisking it with boiling water first helps it dissolve.

MAKES: About 1 cup (1 serving)

INGREDIENTS:

  • 1/4 cup boiling water
  • 1 teaspoon bright-green matcha powder
  • 3/4 cup plain unsweetened non-dairy milk, especially soy milk, chilled
  • 1 tablespoon agave nectar
  • 1/4 teaspoon vanilla extract

 

INSTRUCTIONS:

  1. In a liquid measuring cup, whisk together the boiling water and the matcha.
  2. Pour the mixture into a small fine strainer set over a medium mug.
  3. Stir the inside contents of the strainer and scrape the underside to glean all of the liquid.
  4. Add the remaining ingredients to the mug.
  5. Whisk the mixture well.
  6. Chill the mixture.
  7. Serve cold.
