Yields: 4 cups

 

INGREDIENTS:

  • 4 pounds ripe tomatoes, peeled
  • 1-inch piece fresh ginger
  • 3 cloves garlic
  • 1 3/4 cups white sugar
  • 1 cup red wine vinegar
  • 2 onions, diced
  • 1/4 cup golden raisins
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 teaspoon chili powder
  • A pinch of paprika
  • 1 tablespoon curry paste

 

INSTRUCTIONS:

  1. Start by peeling the ripe tomatoes. To do this, add enough water to a saucepan to cover the tomatoes. Bring the water to a boil over medium-high heat. Using a slotted spoon, carefully submerge the tomatoes in the boiling water for about 1 minute, or until their skins begin to crack and peel. Then, immediately transfer the tomatoes to a bowl of ice water. The peelings should easily slip off after this process.
  2. After peeling the tomatoes, purée them along with the fresh ginger in a blender or food processor until you have a smooth mixture.
  3. Pour the puréed tomato and ginger mixture into your pressure cooker. Stir in all the remaining ingredients, including white sugar, red wine vinegar, diced onions, golden raisins, ground cinnamon, ground coriander, ground cloves, ground nutmeg, ground ginger, chili powder, paprika, and curry paste. Mix everything together thoroughly.
  4. Lock the pressure cooker lid into place and cook at low pressure for 10 minutes. Once the cooking time is complete, remove the pressure cooker from the heat source and allow the pressure to release naturally.
  5. Refrigerate the Fresh Tomato Chutney in a covered container until you’re ready to use it. You can serve it either chilled or at room temperature.

 

NOTE:

  • For a delightful twist, you can spread this chutney over Indian chapati bread, flatbread, or pizza crust. Top it with goat cheese or vegan mozzarella and bake for a unique and flavorful dish.
