INGREDIENTS:

  • 3 tbsp (45g) butter
  • 2 carrots, sliced
  • 1 leek (white part only), sliced
  • 2 parsnips, sliced
  • 1 onion, sliced
  • 1 small turnip, sliced
  • 3 celery ribs, sliced
  • 1 potato, sliced
  • 5 cups (1.2 liters) hot vegetable stock
  • 2 tsp fresh thyme leaves
  • 1 bay leaf
  • Pinch of grated nutmeg
  • Salt and freshly ground black pepper
  • 3 tbsp light cream
  • 3 tbsp milk
  • Bunch of chives, snipped, to garnish

 

INSTRUCTIONS:

  1. In a large pan, melt the butter over medium heat.
  2. Add the sliced carrots, leek, parsnips, onion, turnip, celery, and potato to the pan.
  3. Stir to coat the vegetables well with the butter.
  4. Cover the pan with a lid and cook for 10–15 minutes, or until the vegetables have softened.
  5.  Pour in the hot vegetable stock.
  6. Add the fresh thyme leaves, bay leaf, and a pinch of grated nutmeg to the pot.
  7. Season the mixture with salt and freshly ground black pepper to taste.
  8. Bring the soup to a boil, then reduce the heat and simmer, uncovered, for 30–40 minutes, or until the vegetables become meltingly soft.
  9. Scoop out and discard the bay leaf.
  10. Transfer the soup to a blender and process until smooth. You may need to do this in batches.
  11. If you prefer a very smooth texture, strain the soup through a fine sieve. Otherwise, leave it as it is.
  12. Stir in the light cream and milk, adjusting the consistency by adding more milk if needed.
  13. Season the soup with salt and pepper to taste.
  14. Reheat the soup gently.
  15. Before serving, garnish the Cream of Vegetable Soup with snipped chives.
  16. Serve this heartwarming dish immediately, accompanied by some freshly baked crusty bread for a truly satisfying meal.
