- 1 green chile, cut in half and seeded
- 1/2 cup (120ml) hot water
- 6 green cardamom pods, crushed and seeds extracted
- 1 small blade of mace
- 1/2 tsp coriander seeds, dry-roasted
- 2 tbsp (25g) butter
- 2 large garlic cloves, finely chopped
- Small bunch of scallions (white parts only), finely chopped
- 1-inch (2.5cm) piece of ginger, peeled and finely chopped
- 1/2 tsp garam masala
- 2 cups (450ml) hot vegetable stock
- 3 1/2 fl oz (100ml) light cream
- 1 tbsp chopped cilantro
- Salt and freshly ground black pepper
INSTRUCTIONS:
Step 1: Nutty Essence
- Boil a pan of water and add the pistachio nuts. Cook for 2-3 minutes, then drain and refresh under cold water. Pat them dry and rub them with a kitchen towel to easily remove the skins. Reserve a tablespoon of chopped nuts for garnish.
- Place the remaining nuts in a food processor. Add the green chile and hot water, processing them into a rough paste. Set this pistachio paste aside.

- Grind the cardamom seeds, mace, and coriander seeds into a fine powder using a mortar and pestle.
