INGREDIENTS

  • 4 bananas
  • 1 tablespoon instant coffee granules
  • 1 tablespoon hot water
  • 25g/1oz dark muscovado sugar
  • 250ml/9fl oz Greek-style yogurt
  • 2 teaspoons flaked almonds, toasted

 

PREPARATION

  • In a large mixing bowl, peel and mash three of the bananas using a fork. Reserve the remaining banana for decoration.
  • Dissolve the instant coffee granules in hot water, and stir the mixture into the mashed bananas.
  • Spoon a portion of the mashed banana mixture into four serving dishes, and sprinkle each layer with dark muscovado sugar. Add a spoonful of Greek-style yogurt on top, and repeat the layers until all the ingredients are used.
  • Refrigerate the dishes for 30 minutes to allow the flavors to meld and chill.
  • Just before serving, peel the reserved banana and cut it into slices. Use the slices to top each dish, and sprinkle with toasted flaked almonds for an added crunch.
  • Serve the Brazilian Coffee Bananas immediately and enjoy!
