  • 2 pig’s trotters
  • 25g/1oz butter
  • 1 tablespoon vegetable oil

  • 100g/4oz streaky back bacon, cut into strips
  • 1 cinnamon stick
  • 1 bay leaf

  • 1 1/2 tablespoons plain flour

  • 2 sprigs of fresh flat-leaf parsley
  • 300ml/10fl oz red wine
  • Salt and freshly ground black pepper

  1. In a pan, place the pig’s trotters and cover them with water. Bring to a boil, then cover and simmer for 1 hour, skimming off any scum that rises to the surface. Reserve the cooking liquid and trotters.
  2. In a flameproof casserole dish, melt the butter and oil. Quickly brown the woodpigeons, then remove and set them aside.
  3. Add the pickling onions, diced carrot, diced celery, and bacon to the casserole dish, along with the cinnamon stick, bay leaf, and thyme. Stir to coat the ingredients with the fat.
