INGREDIENTS:

  • 8 ounces uncooked wild rice

  • 1/4 cup yellow raisins, soaked in 1 cup warm water for 30 minutes up to overnight
  • 2 scallions, chopped
  • Juice of 1 lemon (about 1/4 cup)
  • 1 teaspoon ground cumin, toasted in a dry pan until fragrant

 

INSTRUCTIONS:

  1. Prepare the Wild Rice: In a large pot, boil the wild rice in lightly salted water until it becomes tender, and most grains have burst open. This usually takes about 35 minutes. Once cooked, drain the rice thoroughly and set it aside.
  2. Toast the Almonds: In a dry skillet over medium heat, lightly toast the whole almonds. You’ll know they’re ready when they develop small browned spots and take on an oily sheen. Transfer the toasted almonds to a plate and allow them to cool to room temperature.
  3. Cook the Mushrooms: Heat the extra-virgin olive oil in a medium skillet over high heat for about 1 minute. Add the sliced mushrooms to the skillet and cook until they become tender, which should take around 5 minutes. Season the mushrooms with salt and pepper as they cook.
  4. Combine and Dress: In a large mixing bowl, combine the cooked wild rice, toasted almonds, mushrooms (along with the cooking oil), soaked yellow raisins, and chopped scallions. Drizzle the lemon juice over the mixture and sprinkle in the toasted ground cumin. Season everything with salt and pepper according to your taste.
  5. Toss and Serve: Toss all the ingredients together thoroughly to ensure they are well coated with the lemon-cumin dressing. This wild rice salad can be served chilled or at room temperature, making it a versatile and satisfying dish for various occasions.
