INGREDIENTS

  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, cold and diced

 

INSTRUCTIONS

1. Preheat your oven:

  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease each muffin cup.

2. Make the Muffin Batter:

  • In a medium mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt. Set aside.
  • In another large bowl, cream together the softened butter and eggs until light and fluffy.
  • Add the buttermilk and vanilla extract to the butter and egg mixture, and mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
  • Gently fold in the wild blueberries.

3. Fill the Muffin Cups:

  • Spoon the muffin batter into each muffin cup, filling them about 2/3 full.

4. Add Streusel Topping (optional):

  • In a small bowl, combine the 1/4 cup of flour and 1/4 cup of granulated sugar. Add the diced cold butter, and use a fork or pastry cutter to blend until it resembles coarse crumbs.
  • Sprinkle the streusel mixture evenly over the muffins.

5. Bake:

  • Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

6. Cool and Serve:

  • Allow the Wild Blueberry Muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
