INSTRUCTIONS:

  1. In a small pot, combine the sugar syrup and mint stems. Bring the mixture to a boil, then turn off the heat and let it steep for about 10 minutes. Discard the mint stems and allow the mint syrup to cool to room temperature.
  2. Place all but 2 cups of the cubed watermelon in a blender. Add the lemon or lime juice and the mint syrup. Purée the mixture until it becomes liquefied.
  3. Set up a fine-mesh strainer lined with a clean kitchen towel over a large bowl. Pour the watermelon purée into the strainer, pressing on the pulp to extract as much juice as possible. This step helps remove any remaining solids and creates a smoother soup.
  4. Divide the watermelon soup among 4 bowls. Add the reserved watermelon cubes and sprinkle the grated lemon or lime zest over each bowl. Finally, garnish with chopped fresh mint leaves.
  5. If using other melons besides watermelon, you may need to press the purée more in Step 2 and potentially add a little water to achieve the desired consistency.
  6. Serve the watermelon soup chilled and enjoy its refreshing and light flavors.

 

VARIATION:

  • Sparkling Wine with Berries: This variation offers a twist by using mixed berries and sparkling white wine. Follow the same steps as the main recipe, but substitute 3 cups of mixed berries (whole or sliced as needed) for the watermelon. Increase the amount of sugar syrup to 1 cup. Skip Step 2, which involves straining the watermelon purée. Instead, pour the mint syrup over the fruit in the bowls, and then pour the sparkling wine on top.
