SERVES 8

INGREDIENTS:

  • 1 (16-ounce) bag dried chickpeas
  • Enough water to cover beans by 1 inch
  • 2 teaspoons salt
  • 1 onion, diced
  • 2 ½ tablespoons wasabi powder
  • 3 cups barbecue sauce

INSTRUCTIONS:

  1. Prepare Chickpeas: Start by rinsing the dried chickpeas thoroughly, then place them in a bowl and cover them with water. Allow them to soak overnight. This process rehydrates the chickpeas and helps reduce their cooking time.
  2. Boil Chickpeas: After soaking, drain the chickpeas and rinse them once again. In a large pot, add the chickpeas and cover them with fresh water. Bring the water to a boil over high heat and let the chickpeas boil for 10 minutes. This helps to soften the chickpeas before slow cooking.
  3. Transfer to Slow Cooker: Drain the boiled chickpeas in a colander and let them cool to room temperature. Once they are cooled, transfer them to a 4-quart slow cooker.
  4. Season Chickpeas: To season the chickpeas with a spicy kick, add 2 ½ tablespoons of wasabi powder to the chickpeas. Wasabi is known for its pungent and spicy flavor, which pairs well with the sweet barbecue sauce. Mix the wasabi powder thoroughly with the chickpeas.
  5. Add Onions: Dice one onion and add it to the chickpeas. Onions provide a savory and aromatic element to the dish.
  6. Pour Barbecue Sauce: Pour 3 cups of your chosen barbecue sauce over the seasoned chickpeas, onion, and wasabi powder. As mentioned earlier, you can use a store-bought barbecue sauce or make your own using the recipe provided in Chapter 2 of this book.
  7. Combine Ingredients: Stir the chickpeas, onions, wasabi, and barbecue sauce together until all the ingredients are well combined. The chickpeas should be evenly coated with the flavorful sauce.
  8. Slow Cook to Perfection: Cover the slow cooker with its lid and set it to medium heat. Allow the Wasabi-Barbecue Chickpeas to cook for about 5–6 hours. Slow cooking allows the chickpeas to absorb the delicious flavors of the barbecue sauce and wasabi.
  9. Serve and Enjoy: Once the cooking time is complete, your Wasabi-Barbecue Chickpeas are ready to be enjoyed. They can be served hot as a spicy appetizer or side dish, or even at room temperature as a tasty snack.

Wasabi-Barbecue Chickpeas are a flavorful and slightly spicy treat that combines the unique taste of wasabi with the classic goodness of barbecue sauce. Whether you’re serving them as an appetizer, snack, or side dish, these chickpeas are sure to add a spicy kick to your culinary repertoire. The slow cooking process allows the chickpeas to soak up the bold flavors of wasabi and barbecue sauce, resulting in a savory and satisfying dish.
