INGREDIENTS:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 pound (about 3 or 4) potatoes, any variety, peeled and cut into 1-inch chunks
  • 2 bunches leeks, chopped, thoroughly washed twice; 1 cup of the best parts set aside for garnish
  • 1 teaspoon dried sage leaves
  • 1 bay leaf
  • 1/2 cup white wine
  • 2 quarts vegetable stock or water
  • Salt and white pepper to taste

 

INSTRUCTIONS:

  1. Build the Flavor Base: Heat the olive oil in a large soup pot over medium heat for about a minute. Add the chopped onion, potatoes, and all but 1 cup of the chopped leeks. Sauté for approximately 10 minutes, or until the onion turns translucent.
  2. Stir in the dried sage leaves, bay leaf, and white wine. Continue cooking for an additional minute, allowing the wine to infuse its flavors into the mixture.
  3. Add the vegetable stock to the pot. Bring the mixture to a full boil, then reduce the heat to a simmer. Cook for about 45 minutes, or until the potatoes are very tender and starting to fall apart.
  4. Purée and Season: Carefully transfer the soup to a blender in small batches. Purée each batch until it reaches a velvety smooth consistency.
  5. After puréeing, return the soup to the pot. Season it to your taste with salt and white pepper. Adjust the seasonings to achieve the perfect balance of flavors.
  6. Garnish with Precision: Steam, boil, or sauté the reserved cup of leeks until they are tender and vibrant in color. These leeks will serve as the elegant garnish for your Vichyssoise.
