INGREDIENTS

For the Cupcakes:

  • 1 ½ cups all-purpose flour

  • 1 vanilla bean pod

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 vanilla bean pod
  • 2 tablespoons whole milk
  • 1 teaspoon pure vanilla extract

 

INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a separate large bowl, use a hand mixer or stand mixer to cream together the softened butter and granulated sugar until light and fluffy, which takes about 2-3 minutes.
  4. Split the vanilla bean pod lengthwise with a sharp knife. Scrape out the tiny seeds (vanilla caviar) from the inside of the pod using the back of the knife.
  5. Add the vanilla caviar and pure vanilla extract to the butter-sugar mixture, and mix until well combined.
  6. Add the eggs, one at a time, to the mixture, making sure each egg is fully incorporated before adding the next one.
  7. Gradually add the dry mixture to the wet ingredients, alternating with the milk. Start and end with the dry mixture, mixing until just combined after each addition.
  8. Spoon the cupcake batter into the prepared muffin tin, filling each cup about two-thirds full.
  9. Bake the cupcakes in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  10. While the cupcakes are baking, prepare the Vanilla Bean Buttercream Frosting. Split the second vanilla bean pod lengthwise and scrape out the seeds (vanilla caviar).
  11. In a mixing bowl, beat the softened butter until it becomes smooth and creamy.
  12. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  13. Add the vanilla caviar, whole milk, and pure vanilla extract to the frosting, mixing until the frosting is light and fluffy.
  14. Once the cupcakes have cooled completely, pipe or spread the Vanilla Bean Buttercream Frosting on top of each cupcake.
  15. Optionally, you can garnish the cupcakes with additional vanilla bean caviar or a decorative touch of your choice.
