INGREDIENTS:

  • 1 tablespoon vegetable oil
  • 8 ounces shiitake mushrooms, stemmed and sliced thin
  • 2 cups water
  • ¼ cup mirin
  • 3 tablespoons rice vinegar
  • 3 tablespoons soy sauce
  • 2 garlic cloves, smashed and peeled
  • 1 (1-inch) piece ginger, peeled, halved, and smashed
  • ½ ounce dried shiitake mushrooms, rinsed and minced
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon Asian chili-garlic sauce
  • 1 pound mustard greens, stemmed and chopped into 2-inch pieces
  • Salt and pepper
  • 1 pound fresh udon noodles

 

INSTRUCTIONS:

  1. Prepare the Shiitake-Ginger Sauce: Heat vegetable oil in a Dutch oven over medium-high heat. Add fresh shiitake mushrooms and cook until softened and lightly browned. Stir in water, mirin, rice vinegar, soy sauce, garlic, ginger, dried shiitake mushrooms, sesame oil, and chili-garlic sauce. Bring the mixture to a simmer, reduce the heat to medium-low, and simmer until the liquid has reduced by half. Discard the garlic and ginger, cover the pot to keep warm, and set the sauce aside.
  2. Cook the Mustard Greens: In a separate large pot, bring 4 quarts of water to a boil. Add the mustard greens and 1 tablespoon of salt, and cook until the greens are almost tender, about 4 to 5 minutes.
  3. Cook the Udon Noodles: Add the fresh udon noodles to the pot with the greens and continue cooking until the greens and noodles are both tender, approximately 2 minutes. Reserve ⅓ cup of the cooking water, drain the noodles and greens, and return them to the pot.
  4. Combine Noodles, Greens, and Sauce: Add the shiitake-ginger sauce and reserved cooking water to the noodles and greens. Toss everything to combine. Cook over medium-low heat, tossing constantly, until the sauce clings to the noodles for about 1 minute.
