INGREDIENTS:

  • 1 fresh cucumber
  • 1 cup Greek yogurt or strained yogurt

  • ½ teaspoon Mint Paste (optional)

INSTRUCTIONS:

  1. Peel the cucumber and grate it using a mandoline or grater. Once grated, squeeze out the excess liquid from the cucumber.
  2. Place the grated cucumber in a bowl.
  3. Add the Greek yogurt or strained yogurt to the bowl.
  4. Mix in the Garlic Scape Paste and mint paste (if using).
  5. Season with salt to taste.
  6. Stir all the ingredients together until well combined.

  • If you’re using regular yogurt instead of Greek yogurt, strain it to remove any excess liquid. Line a fine-mesh sieve with cheesecloth or a coffee filter, place it over a bowl, and add the yogurt. Allow it to strain in the refrigerator for a couple of hours or overnight. This process will result in a thicker yogurt that blends well with the other ingredients.
  • For the best flavor, refrigerate the Tzatziki for at least an hour before serving. This resting time allows the flavors to meld together, resulting in a more vibrant and well-balanced taste.
