Gluten-free option, Nut-free
This recipe is always a must-have for our Sunday brunch, especially because it comes together in less than ten minutes. The nutritional yeast adds a cheesy flavor, while the turmeric provides a color reminiscent of scrambled eggs. Serve this classic scramble as is or serve it on a Breakfast Sandwich.
Tofu scramble is a popular vegan alternative to traditional scrambled eggs, offering a delicious and nutritious option for those looking to avoid animal products or simply add variety to their breakfast choices. Made from crumbled tofu seasoned with a blend of spices, this dish replicates the texture and flavor of scrambled eggs while providing a plant-based source of protein.
The use of firm or extra-firm tofu gives the scramble its characteristic texture, which closely resembles that of scrambled eggs. The tofu is crumbled and cooked with a mixture of seasonings, including nutritional yeast, turmeric, garlic powder, onion powder, and paprika. Turmeric not only adds a rich golden hue but also contributes to the dish’s savory flavor profile.
Nutritional yeast, a common ingredient in vegan cooking, imparts a cheese-like umami taste and is a source of essential B vitamins. The choice of spices, such as garlic and onion powder, enhances the overall flavor, while paprika adds a touch of smokiness.
The tofu scramble can be customized to suit personal preferences. Some variations include adding diced vegetables like bell peppers, onions, or spinach for extra flavor and nutrients. The addition of soy sauce or tamari provides a savory depth to the dish, and red pepper flakes can be included for those who enjoy a bit of heat.
Served as a hearty breakfast option, the tofu scramble can be enjoyed on its own, wrapped in a tortilla for a breakfast burrito, or paired with toast, avocado, or a side of fresh greens. It’s not only a filling and satisfying meal but also a versatile canvas for creative adaptations that cater to different tastes and dietary needs. Whether you’re following a vegan lifestyle or simply want to explore new breakfast options, tofu scramble is a flavorful and wholesome choice to start your day on the right note.
