In this tofu salad recipe, we take extra-firm tofu and transform it into a savory and marinated delight that perfectly complements a medley of fresh vegetables. INGREDIENTS:

For the Tofu Marinade:

  • 5 tofu cakes, cut into 1″ cubes
  • 2 tablespoons water
  • Black pepper
  • 2 teaspoons sugar
  • 1/4 cup dry sherry or Chinese cooking wine
  • 1/4 cup soy sauce
  • 1/4 cup white wine vinegar
  • 1 clove garlic, chopped
  • Pinch of toasted and ground anise seed
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil

 

For the Salad:

  • 1 carrot, julienned
  • 1/2 pound snow peas, julienned
  • 1 cup finely chopped cabbage
  • 5 cremini or white mushrooms, sliced
  • 4 scallions, julienned

 

For the Dressing:

  • 1/4 teaspoon salt
  • 2 teaspoons sesame oil
  • 2 teaspoons tamari soy sauce
  • Juice of 1/2 lemon
  • Black pepper to taste
  • 1 tablespoon sugar

 

INSTRUCTIONS:

1. Marinate the Tofu:

  • Spread the tofu cubes into a single layer in a baking dish or sheet pan.
  • In a separate bowl, whisk together the water, black pepper, sugar, dry sherry or Chinese cooking wine, soy sauce, white wine vinegar, chopped garlic, toasted and ground anise seed, sesame oil, and vegetable oil to create the marinade.
  • Pour the marinade over the tofu, ensuring all the cubes are well-coated.
  • Marinate the tofu for 3 hours or overnight in the refrigerator, turning the cubes occasionally to distribute the flavors evenly.

2. Prepare the Salad:

  • In a large mixing bowl, combine the julienned carrot, julienned snow peas, finely chopped cabbage, sliced mushrooms, and julienned scallions.

3. Make the Dressing:

  • In a separate small bowl, prepare the dressing by whisking together the salt, sesame oil, tamari soy sauce, lemon juice, black pepper, and sugar until well combined.

4. Assemble the Tofu Salad:

  • Add the marinated tofu cubes to the prepared salad.
  • Pour the dressing over the salad and tofu.
  • Toss gently to combine all the ingredients, ensuring the dressing coats everything evenly.

5. Serve:

  • Allow the salad to marinate in the refrigerator for an additional 1 hour.
  • Just before serving, give the salad a final toss.

  • Choose Extra-Firm Tofu: When making tofu salad, it’s best to use extra-firm tofu. This type of tofu holds its shape well and absorbs the marinade nicely without becoming too mushy.

This can be done by wrapping the tofu block in a clean kitchen towel, placing a heavy object on top (like a cast-iron skillet), and letting it sit for about 30 minutes. Pressing helps the tofu absorb the flavors of the marinade more effectively.

  • Adjust Seasoning: Taste the dressing before pouring it over the salad and tofu. Adjust the salt, sugar, and other seasonings to your liking. You can also add a bit more lemon juice or tamari soy sauce for extra zest.
  • Chilling Time: Allowing the salad to chill for at least an hour before serving helps the flavors meld together and makes for a more refreshing dish. However, if you’re short on time, you can serve it immediately after mixing.
