MAKES: ABOUT 2 CUPS
INGREDIENTS:
- 1 cup dry white wine
- ½ cup Champagne vinegar
- 8 tablespoons (1 stick) unsalted butter
- 2 or 3 shallots, chopped
- 1 tablespoon compatible dry rub or other seasoning OR 1 teaspoon kosher salt or coarse sea salt
INSTRUCTIONS:
- In a saucepan, combine all of the ingredients: dry white wine, Champagne vinegar, unsalted butter, chopped shallots, and your choice of either a compatible dry rub or seasoning, or kosher salt or coarse sea salt.
- Heat the saucepan over medium heat, allowing the ingredients to meld together. Keep the mop warm over low heat between bastes to ensure it stays at a consistent temperature.
- Apply the white wine butter mop to the seafood that is being cooked in the smoker. Baste the seafood about once every 30 minutes. This will help infuse the seafood with the flavors of the mop and keep it moist and flavorful throughout the smoking process.
VARIATION:
