Peanut Chikki, also known as Bengali peanut brittle, is a beloved treat in Indian households, particularly during the winter season. This delightful snack consists of just two primary ingredients: peanuts and honey. While it may seem simple, the key to making perfect Peanut Chikki lies in achieving the correct consistency of the jaggery syrup, which should reach the hardball stage. Removing the peanut shells can be a bit time-consuming, but using pre-shelled peanuts simplifies the process. Peanut Chikki is not only a winter favorite but also a popular snack among children.

Cooking Time: 2 hour

Serving Size: 4

INGREDIENTS:

  • 1 cup roasted peanuts (skin-free)
  • 1 cup sugar

INSTRUCTIONS:

  1. Prepare Peanut Powder: Begin by placing the roasted peanuts in a blender or food processor. Grind the peanuts until you achieve a smooth peanut powder. Set this aside for later use.
  2. Make Jaggery Syrup: On a medium flame, take a pan and add the sugar along with 2 tablespoons of water. Continuously stir the sugar as it starts to melt and transform into caramel. As the sugar completely dissolves and there are no lumps left, turn off the heat.
  3. Combine Peanut Powder and Jaggery Syrup: Quickly add the ground peanut powder into the caramelized sugar. Thoroughly mix the peanut powder with the caramelized sugar to create a smooth paste.
  4. Shape and Set: Immediately transfer the peanut paste onto a greased tray or plate. Spread the paste evenly across the tray and smooth the surface.
  5. Cut into Squares: While the peanut paste is still hot, use a knife to draw lines and create squares or rectangles on the surface. This will make it easier to break into individual pieces once it cools.
  6. Allow to Cool: Let the Peanut Chikki cool completely at room temperature. As it cools, it will harden and hold its shape.
  7. Enjoy Your Homemade Peanut Chikki: Once the Chikki has cooled and solidified, carefully break it into individual pieces along the pre-drawn lines. Savor the sweet, nutty goodness of your homemade Peanut Chikki.

TIPS:

  • Use Fresh and Quality Peanuts: Start with fresh, high-quality, skin-free peanuts. This will ensure a better texture and flavor in your Chikki.
  • Grind Peanuts to the Right Consistency: When grinding the peanuts, aim for a fine powder. A consistent texture will help bind the Chikki together properly.
  • Constantly Stir the Jaggery Syrup: When making the jaggery syrup, it’s essential to stir it continuously to prevent it from burning or sticking to the pan.
  • Hardball Stage: Pay close attention to the consistency of the jaggery syrup. It should reach the hardball stage, which is crucial for achieving the desired crunchiness in your Chikki.
  • Quick Mixing: Once you’ve added the peanut powder to the caramelized sugar, mix it swiftly and thoroughly. The hot syrup can harden quickly, so work fast.
  • Grease the Tray: Ensure that the tray or plate you use for setting the Chikki is greased properly. This will prevent the Chikki from sticking to the surface.
  • Pre-Cut Squares or Rectangles: Use a knife to draw lines on the Chikki while it’s still hot, creating squares or rectangles. This makes it easier to break the Chikki into individual pieces later on.

Celebrate the winter season or any special occasion with this delightful Indian treat. Share the joy by offering your homemade Peanut Chikki to family and friends, and relish the taste of this classic snack that’s cherished across India.
