MAKES: ABOUT 1¾ CUPS

 

INGREDIENTS:

  • 1 cup pineapple juice
  • ½ medium onion
  • 3 or 4 garlic cloves
  • 2 or 3 canned chipotle chiles in adobo, plus 2 tablespoons adobo sauce from the can
  • 2 tablespoons vegetable oil or sunflower oil
  • 2 teaspoons kosher salt or coarse sea salt

 

INSTRUCTIONS:

  1. Puree all of the ingredients in a blender until you get a smooth paste. Divide the paste into two equal portions. Rub half of the paste onto the pork immediately after preparing it. Ensure that the meat is well-coated with the seasoning. Allow the seasoned meat to rest for at least 45 minutes at room temperature, or refrigerate it wrapped or covered overnight for even more intense flavor before cooking.
  2. About halfway through the cooking time of the pork, take the reserved portion of the paste and rub it onto the meat, using a pair of washable barbecue mitts if available. This second application of the paste further enhances the taste and ensures that the flavors penetrate the meat evenly.
