YIELD: 6 to 8 servings
INGREDIENTS:
- 12 oz (340 g) medium pasta shells or pasta of choice (gluten-free if needed)
- 2 tbsp (30 ml) olive oil, divided
- 16 oz (453 g) vegan ground “beef” (we like Impossible and Beyond Beef), defrosted if frozen (gluten-free, nut-free and/or soy-free if needed)
- 2 tbsp (5 g) Taco Seasoning or store-bought
- ½ cup (120 ml) plain, unsweetened rice milk
- 1 cup (240 g) Roasted Tomato Salsa or store-bought salsa of choice
- 1 (14.5-oz [411-g]) can petite diced tomatoes
- 2 tbsp (14 g) canned chopped green chiles
- 1 cup (113 g) vegan Cheddar shreds or store-bought (nut-free and/or soy-free if needed)
- 1 cup (113 g) vegan Mozzarella shreds or store-bought (nut-free and/or soy-free if needed)
- ½ tsp salt, plus more to taste
- ¼ tsp freshly ground black pepper, plus more to taste
- Chopped fresh cilantro, for topping (optional)
INSTRUCTIONS:
- Cook the pasta according to the package instructions. Once cooked, drain and rinse in cold water, place back in the pot and toss with 1 tablespoon (15 ml) of the olive oil to keep from sticking.
- In a large skillet, heat the remaining 1 tablespoon (15 ml) of olive oil over medium-low heat. Stir in the vegan ground “beef.” Cook, stirring occasionally, for 3 to 5 minutes, or until lightly browned.
- Sprinkle the taco seasoning on top of the “beef” and stir until it is fully coated. Add the rice milk and stir to completely combine. Cook for 3 to 5 minutes, or until the “beef” is completely cooked.
- Stir in the Roasted Tomato Salsa, petite diced tomatoes, chopped green chiles, vegan Cheddar shreds, and vegan Mozzarella shreds. Cook, stirring occasionally, for about 3 minutes, or until the shreds have melted.
- Stir in the cooked pasta, salt, and freshly ground black pepper. Add more salt and pepper to taste, if desired.
- Serve the creamy and flavorful pasta dish topped with chopped fresh cilantro for added freshness and flavor, if desired.
