ROASTED BUTTERNUT SQUASH

SERVES: 2 to 3

INGREDIENTS:

  • 1 large butternut squash
  • 4 garlic cloves, minced
  • 2 tablespoons diced butter
  • 3 tablespoons olive oil
  • 2 tablespoons maple syrup
  • Salt and freshly ground black pepper

 

INSTRUCTIONS:

  1. Preheat the oven to 400°F
  2. Peel the squash, scrape out the seeds, and cut the flesh into 1-inch cubes.
  3. Put the squash on a large rimmed baking sheet.
  4. Sprinkle with minced garlic and diced butter.
  5. Drizzle with olive oil and maple syrup.
  6. Toss all the ingredients together well.
  7. Season with 1 teaspoon salt and ½ teaspoon pepper.
  8. Roast for 20 minutes.
  9. Using a spatula or tongs, turn the squash over.
  10. Roast for about 20 minutes longer, until softened and nicely browned.
  11. Transfer to a platter and serve
