SERVES: 2 to 3
INGREDIENTS:
- 1 large butternut squash
- 4 garlic cloves, minced
- 2 tablespoons diced butter
- 3 tablespoons olive oil
- 2 tablespoons maple syrup
- Salt and freshly ground black pepper
INSTRUCTIONS:
- Preheat the oven to 400°F
- Peel the squash, scrape out the seeds, and cut the flesh into 1-inch cubes.
- Put the squash on a large rimmed baking sheet.
- Sprinkle with minced garlic and diced butter.
- Drizzle with olive oil and maple syrup.
- Toss all the ingredients together well.
- Season with 1 teaspoon salt and ½ teaspoon pepper.
- Roast for 20 minutes.
- Using a spatula or tongs, turn the squash over.
- Roast for about 20 minutes longer, until softened and nicely browned.
- Transfer to a platter and serve
