INGREDIENTS:

  • 2 tablespoons mayonnaise
  • 2 tablespoons chili sauce
  • 1 teaspoon lemon juice
  • 2 teaspoons vinegar
  • 1 (10-ounce) can black beans, drained
  • 1 (10-ounce) can whole kernel corn, drained
  • 1 large bell pepper, finely diced
  • 1 small onion, diced
  • 2 tablespoons fresh cilantro, finely chopped
  • 4 cooked boneless chicken breasts
  • 4 pita bread rounds
  • ½ cup shredded Cheddar cheese

 

INSTRUCTIONS:

  1. In a small bowl, mix together the mayonnaise, chili sauce, lemon juice, and vinegar. Let the mixture chill in the refrigerator for a minimum of 30 minutes.
  2. In a medium bowl, combine the black beans, corn, bell pepper, onion, and cilantro. Stir well to mix the ingredients. Let the bean mixture chill in the refrigerator for at least 30 minutes.
  3. Slice the cooked chicken breasts into thin strips.
  4. Heat a grill pan or skillet over medium heat. Grill the pita bread rounds for 1-2 minutes per side until they are hot and flexible.
  5. Spread the mayonnaise mixture between each pita round, covering the surface evenly.
  6. Top each pita round with the sliced chicken breast strips.
  7. Spoon the chilled bean mixture over the chicken on each pita round, spreading it evenly.
  8. Sprinkle shredded Cheddar cheese over the bean mixture on each pita round.
  9. Serve the chicken and bean pita pockets as is, or you can heat them in a preheated oven at 350°F (175°C) for about 5 minutes, until the cheese melts and the ingredients are heated through.
