INGREDIENTS:
- ½ pound ground beef
- ½ teaspoon salt
- ¼ teaspoon dried minced onion
- ¼ teaspoon paprika
- 1½ teaspoons chili powder
- 2 tablespoons water
- 1 cup cooking oil
- 8 (6″) flour tortillas
- 1 (16-ounce) can refried beans
- 2/3 cup mild salsa
- 1/3 cup diced tomato
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- ¼ cup chopped green onion
- ¼ cup sliced black olives
INSTRUCTIONS:
- Preheat the oven to 400°F.
- Cook the ground beef over medium heat for 7–10 minutes until brown, then drain.
- Return the meat to the pan and add the salt, minced onion, paprika, chili powder, and water. Let the mixture simmer over medium heat for 10 minutes, stirring often.
- Heat the oil in a frying pan over medium-high heat.
- When the oil is hot, fry each tortilla for about 30–45 seconds per side and drain on paper towels. The tortillas should become golden brown.
- Heat the refried beans in the microwave for 1–2 minutes.
- Place 4 tortillas on a baking sheet. For each pizza, spread 1/3 cup of beans on a tortilla. Next, add 1/3 cup of the meat mixture, and then another tortilla on top.
