INGREDIENTS:

  • ½ pound ground beef
  • ½ teaspoon salt
  • ¼ teaspoon dried minced onion
  • ¼ teaspoon paprika
  • 1½ teaspoons chili powder
  • 2 tablespoons water
  • 1 cup cooking oil
  • 8 (6″) flour tortillas
  • 1 (16-ounce) can refried beans
  • 2/3 cup mild salsa
  • 1/3 cup diced tomato
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ¼ cup chopped green onion
  • ¼ cup sliced black olives

 

INSTRUCTIONS:

  1. Preheat the oven to 400°F.
  2. Cook the ground beef over medium heat for 7–10 minutes until brown, then drain.
  3. Return the meat to the pan and add the salt, minced onion, paprika, chili powder, and water. Let the mixture simmer over medium heat for 10 minutes, stirring often.
  4. Heat the oil in a frying pan over medium-high heat.
  5. When the oil is hot, fry each tortilla for about 30–45 seconds per side and drain on paper towels. The tortillas should become golden brown.
  6. Heat the refried beans in the microwave for 1–2 minutes.
  7. Place 4 tortillas on a baking sheet. For each pizza, spread 1/3 cup of beans on a tortilla. Next, add 1/3 cup of the meat mixture, and then another tortilla on top.
  8. Top each of the second tortillas with 2 tablespoons of salsa.
  9. Divide the diced tomatoes, shredded Cheddar cheese, shredded Monterey Jack cheese, chopped green onions, and sliced black olives evenly on top of the salsa.
  10. Bake the pizzas for 8–12 minutes, or until the cheese is melted and bubbly.
  11. Serve hot and enjoy!
