INGREDIENTS:

  • 1/4 cup olive oil
  • 4 scallions, minced
  • 1/4 cup fresh mint, minced
  • 1/4 cup fresh parsley, minced
  • 3 cloves garlic, peeled and minced
  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 1/3 teaspoon freshly ground black pepper
  • 1/3 teaspoon lemon zest, grated
  • 1 (16-ounce) jar grape leaves
  • 2 cups water
  • 1/3 cup fresh lemon juice

 

INSTRUCTIONS:

  1. Begin by heating the olive oil in your pressure cooker over medium-high heat. Add the minced scallions, mint, and parsley, and sauté them for about 2 minutes until the scallions become soft.
  2. Add the minced garlic to the sautéed vegetables and continue to sauté for an additional 30 seconds until the garlic releases its aroma.
  3. Stir in the long-grain white rice and cook for 1 minute, allowing the rice to absorb the flavors of the vegetables and herbs.
  4. Pour in the vegetable broth, add the salt, freshly ground black pepper, and grated lemon zest. Stir to combine all the ingredients.
  5. Lock the lid of your pressure cooker into place and bring it to high pressure. Maintain this pressure for 8 minutes to allow the rice to cook perfectly.
  6. Perform a quick release of the pressure, remove the lid, and transfer the cooked rice mixture to a separate bowl.
  7. Prepare the grape leaves by draining them from the jar and rinsing them thoroughly in warm water. Trim away any thick ribs from the grape leaves.
  8. Spoon approximately 2 teaspoons of the rice mixture onto each grape leaf. Fold the sides of the leaf over the filling and then roll it up from the bottom to the top. Continue this process for all the grape leaves.
  9. Pour the 2 cups of water into your pressure cooker. Place a steamer basket inside the pressure cooker, and arrange the stuffed grape leaves seam-side down in the basket. Drizzle the fresh lemon juice over the stuffed grape leaves.
  10. Cover the stuffed grape leaves with heavy plastic wrap, pressing it down around them to keep them in place.
  11. Lock the lid of the pressure cooker into place and bring it to high pressure. Maintain this pressure for 10 minutes.
  12. Perform a quick release of the pressure, remove the lid, and carefully lift the steamer basket out of the pressure cooker. Allow the stuffed grape leaves to rest for 5 minutes while leaving the plastic wrap in place.
  13. Serve your stuffed grape leaves hot or cold as a delightful appetizer or main course.
