INGREDIENTS:

  • 1 tsp vanilla essence
  • 1 (85g) package strawberry flavoured jelly mix (recommended: Jello)
  • Fresh strawberries, for garnish
  • 30g icing sugar
  • 240ml double cream
  • 500g fresh strawberries, sliced
  • 2 tbsp cognac
  • 50g caster sugar
  • 1 (520g) box strawberry cake mix

 

INSTRUCTIONS:

  1. Preheat your oven to 180C/Gas 4 to prepare for baking the cake.
  2. Follow the directions provided on the cake mix box to prepare the cake batter. This typically involves combining the mix with specified amounts of oil, water, and eggs, and beating until well combined.
  3. Once the cake is baked, remove it from the oven and allow it to cool completely. While the cake is cooling, take a medium bowl and combine the strawberries, cognac (a type of brandy), and sugar. Let the mixture macerate for about 20 minutes to allow the flavors to meld together.
  4. In a separate bowl, whip the cream with icing sugar and vanilla extract at medium-high speed using an electric mixer. Continue whipping until the cream reaches stiff peaks. Be careful not to overwhip, as this can result in a grainy texture.
  5. Prepare the jelly mix according to the instructions on the box. Make sure the jelly mix cools to a liquid consistency but does not harden. Place the jelly mix in the refrigerator to achieve the desired consistency.
  6. Using a straw, poke holes all over the cooled cake. This will create channels for the jelly to seep into, adding moisture and flavor. Pour the prepared jelly into the holes and spread it evenly over the top of the cake.
  7. Next, spread a layer of the macerated strawberries on top of the cake, ensuring even distribution. Then, add a layer of whipped cream on top of the strawberries, creating decorative swirls and ripples with a spoon or spatula. Finally, garnish the cake with fresh strawberries for an attractive presentation.
  8. Refrigerate the cake for at least 4 hours to allow the flavors to meld and the cake to set. This will enhance the taste and texture of the dessert.
