The addition of a little lemon juice here creates a playful tang that delights the taste buds. If you prefer more zip, use the zest and juice of one or more
lemons.
INGREDIENTS: YIELD: 1 QUART
- 4 cups strawberries
- Juice and zest of ½ lemon
- 1 cup sugar
- 1 cup Greek yogurt
- 1 teaspoon vanilla extract
INSTRUCTIONS:
- In a small bowl, combine the strawberries, lemon juice and zest, and sugar. Stir and allow to macerate at room temperature for 1–2 hours.
- After strawberries are ready, place all ingredients in a blender or food processor, and blend until smooth.
- Add to ice cream maker and follow manufacturer’s instructions for freezing.
