  • 1/2 pound snow peas, halved diagonally
  • 1 medium red onion, halved and sliced with the grain
  • 2 pieces fresh ginger, julienned
  • 3 cloves garlic, finely chopped
  • Salt and white pepper to taste
  • 2 tablespoons soy sauce
  • 1 tablespoon Chinese cooking wine or dry sherry (optional)
  • 1 teaspoon Asian sesame oil
  • Black sesame seeds or toasted white sesame seeds for garnish (optional)

 

INSTRUCTIONS:

  1. Prepare the Greens: Start by mixing together the collard greens, Chinese cabbage, and watercress in a large bowl. Ensure that the greens are thoroughly mixed. Rinse them well under cold running water and then dry them. Properly washing and drying the greens is essential for a crisp stir-fry.
  2. Heat Peanut Oil: In a large skillet (13 inches) over high heat, add the peanut oil. Heat it until it shimmers but does not reach a smoky point.
  3. Sauté Mushrooms and Vegetables: Add the mushrooms, carrots, snow peas, onion, ginger, and garlic to the skillet. Sauté for approximately 2 minutes, stirring frequently. Allow some parts of the vegetables to brown for added flavor. Season this mixture with salt and white pepper.
  4. Add Greens and Seasonings: Introduce the prepped greens to the skillet. Pour in the soy sauce, and if you choose, the Chinese cooking wine or dry sherry.
