INGREDIENTS:

 

FRIED CAULIFLOWER

  • 1 cup (125 g) all-purpose flour
  • 1 cup (240 ml) water
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp freshly ground black pepper
  • Canola oil, for frying
  • 1 large or 2 small heads cauliflower, chopped into bite-sized pieces (about 18 oz [510 g] chopped)

 

SESAME SAUCE

  • 1 tbsp (8 g) cornstarch
  • 1 tbsp (15 ml) water
  • 2 tbsp (30 ml) pure (untoasted) sesame oil
  • 3 cloves garlic, peeled and minced, or 1 tbsp (9 g) jarred minced garlic
  • 2 tbsp (30 ml) unseasoned rice vinegar
  • ¼ cup (60 ml) pure maple syrup or agave
  • ¼ cup (55 g) packed light brown sugar
  • ½ cup (120 ml) soy sauce (or coconut aminos for soy-free)
  • ¼ cup (60 ml) sweet chili sauce

 

FOR TOPPING

  • Sesame seeds
  • Chopped green onion

 

INSTRUCTIONS:

 

  1. Prepare the Fried Cauliflower:
    • In a medium-sized bowl, whisk together the flour, water, onion powder, garlic powder, salt, and pepper.
    • In a deep saucepan or pot, heat 2 inches (5 cm) of oil to 350°F (180°C), or use a deep fryer according to the manufacturer’s instructions.
    • Dip each piece of cauliflower into the flour mixture and place it in the oil, working in batches if necessary.
    • Fry for 6 to 10 minutes, stirring occasionally, until golden brown. Remove from the oil and set on paper towels to absorb excess oil.
  2. Make the Sesame Sauce:
    • In a small bowl, combine the cornstarch with the water. Set aside.
    • In a large sauté pan, heat the sesame oil over medium heat. Stir in the garlic and cook for 30 seconds to 1 minute, until fragrant.
    • Add the rice vinegar, maple syrup, brown sugar, soy sauce, and sweet chili sauce. Whisk to combine.
    • Increase the heat to medium-high, bringing the mixture to a gentle boil. Add the cornstarch slurry and whisk to combine.
    • Lower the heat to low, bringing the mixture to a simmer. Let simmer, whisking often, for 3 to 5 minutes, or until the sauce becomes thick.
  3. Combine and Serve:
    • Stir in the fried cauliflower into the sesame sauce.
    • Remove from the heat and serve the fried cauliflower topped with sesame seeds and chopped green onions.
