INGREDIENTS:

  • 1 cup cabbage, shredded
  • 1 cup bamboo shoots, sliced
  • 1/4 cup cilantro, chopped
  • 2 cloves garlic, minced
  • 5 shiitake mushrooms, sliced
  • 2 carrots, grated
  • 1 teaspoon soy sauce
  • 1 teaspoon rice wine vinegar
  • 12 spring roll wrappers
  • 2 cups water

 

INSTRUCTIONS:

  1. In a medium bowl, combine the shredded cabbage, sliced bamboo shoots, chopped cilantro, minced garlic, sliced shiitake mushrooms, grated carrots, soy sauce, and rice wine vinegar. Stir the mixture until the ingredients are well combined.
  2. Lay out the spring roll wrappers on a flat surface.
  3. Take each spring roll wrapper and place an equal amount of the vegetable mixture in a row down the center of the wrapper.
  4. Carefully roll up the wrapper, ensuring you tuck in the sides as you go to enclose the filling. Place the rolled spring rolls side by side in the pressure cooker steamer basket.
  5. Add 2 cups of water to the pressure cooker. Carefully lower the steamer basket with the spring rolls into the pressure cooker.
  6. Lock the lid of the pressure cooker into place. Bring it to high pressure and maintain this pressure for 3 minutes. Afterward, perform a quick pressure release and carefully remove the lid.
