  4. Sauté the Onion: Heat 3 tablespoons of olive oil in a small skillet.
  5. Add the chopped yellow onion and cook until it turns golden, which should take about 7 minutes.
  6. Toss the sautéed onion with the chopped spinach and stir in the grated Swiss cheese.
  7. Blend the Egg Mixture: In a blender, combine 2 eggs, 1 1/2 cups of light cream, 1/4 teaspoon of salt, 1/4 teaspoon of freshly ground black pepper, a pinch of nutmeg, and 1/4 cup of grated Parmesan cheese.
  8. Blend for about 1 minute until the mixture is well combined.
  9. Assemble the Pie: Spread the spinach and onion mixture into the prebaked pie crust.
  10. Add the Feta Cheese: Top the spinach mixture with crumbled feta cheese.
  11. Decorate with Tomatoes (Optional): Optionally, arrange slices of 2 medium tomatoes on top for an extra burst of flavor and visual appeal.
