INGREDIENTS:

Spice Mix:

  • 1 bay leaf

  • ½ teaspoon ground white pepper
  • 1 teaspoon paprika

  • 1 small/medium onion, chopped
  • 2 stalks celery, chopped (about ½–¾ cup)
  • 1 green pepper, chopped (seeds and core removed)
  • 3 cloves garlic, chopped
  • 1½ cups chicken stock (preferably homemade) or organic/low-salt
  • ¼ cup tomato paste (use the remaining paste from the jambalaya), mixed with ¾ cup water
  • 1 teaspoon brown or white sugar
  • 2–4 dashes hot sauce, such as Tabasco

 

INSTRUCTIONS:

  1. Melt the butter in a saucepan, then add the olive oil.
  2. Add the green pepper, onions, and celery. Cook until the onions are translucent and the vegetables are beginning to soften.
  3. Stir in the spice mix prepared earlier, coating the vegetables evenly with the aromatic flavors.
  4. Pour in the chicken stock and tomato paste mixture. Add the sugar and hot sauce, bringing the mixture to a boil.
  5. Once boiling, reduce the heat to a simmer. Let the sauce cook until the vegetables become tender, and the sauce reduces by approximately one quarter. This should take around 30 minutes.

 

TIPS:

  • Store any leftover sauce in an airtight container in the refrigerator for up to 3-4 days. It can be reheated and used to enhance future meals.
  • Adjust the level of spiciness by increasing or decreasing the amount of cayenne pepper or hot sauce according to your preference.

  • For a vegetarian version, substitute vegetable stock for the chicken stock to maintain the rich flavor without the meat-based component.
