INGREDIENTS:

  • 2 (15-ounce) cans of sliced peaches in syrup
  • 1/4 cup of water
  • 1 tablespoon of white wine vinegar
  • 1/2 teaspoon of ground allspice
  • 1 cinnamon stick
  • 4 whole cloves
  • 1/2 teaspoon of ground ginger
  • Pinch of cayenne pepper
  • 1 tablespoon of candied ginger, minced (optional)
  • 3 whole black peppercorns (optional)

 

INSTRUCTIONS:

  1. In your pressure cooker, combine all the ingredients. Give it a good stir to ensure everything is well mixed.
  2. Lock the lid securely in place and bring the pressure cooker to low pressure. Maintain this low pressure for 3 minutes.
  3. After the cooking time, remove the pressure cooker from the heat. Perform a quick release of the pressure and carefully remove the lid.
  4. Using a slotted spoon, remove and discard the cinnamon stick, cloves, and peppercorns if you opted to use them.
  5. Return the pressure cooker to medium heat. Allow the mixture to simmer and stir for approximately 5 minutes. This will help to thicken the syrup and infuse the peaches with the delightful spiced flavors.

 

VARIATIONS:

  • Spiced Peach Butter: If you want to take this recipe to the next level, you can create a spiced peach butter by processing the peaches and liquid in a blender or food processor until smooth after Step 2. Return the mixture to the pressure cooker and simmer and stir over low heat for about 30 minutes, or until it’s thick enough to coat the back of a spoon.
