YIELD: 2 to 4 servings

 

INGREDIENTS:

  • 1 tsp cornstarch
  • 2 tbsp (30 ml) water
  • 2 tbsp (34 g) white miso paste (gluten-free if needed)
  • 4 cloves garlic, peeled and minced, or 4 tsp (12 g) jarred minced garlic
  • 2 tbsp (30 ml) soy sauce (or tamari for gluten-free) (low-sodium if desired)
  • 1 tsp pure (untoasted) sesame oil
  • 2 tsp (10 ml) olive oil
  • 2 cups (326 g) frozen edamame (in the pod)
  • Sesame seeds, for topping

 

INSTRUCTIONS:

  1. In a small bowl, combine the cornstarch with the water. Whisk in the miso, garlic, soy sauce, and sesame oil. Set this mixture aside.
  2. Heat a wok over high heat or a large skillet over medium heat.
  3. Once the wok or skillet is hot, add the olive oil and frozen edamame. Let them cook, stirring occasionally, for about 6 to 8 minutes. You want the edamame to get slightly charred on the outside.
  4. Lower the heat to medium (if using a wok) or medium-low (if using a skillet). Add the miso mixture to the edamame. Cook, stirring constantly, for another 1 to 2 minutes. The sauce will thicken during this time.
  5. Serve the Miso Garlic Edamame topped with sesame seeds for extra flavor and a delightful crunch.
