INGREDIENTS:
- 31 1/2 oz (100g) dried white cannellini beans
- 2 tbsp olive oil
- 2 celery ribs, finely chopped
- 2 carrots, finely chopped
- 1 onion, finely chopped
- 14 1/2 oz (400g) can diced tomatoes
- 21 1/2 cups (750ml) hot vegetable stock or chicken stock
- Salt and freshly ground black pepper
- 2 oz (60g) small short-cut pasta
- 4 tbsp chopped flat-leaf parsley
- 1 1/2 oz (40g) Parmesan, finely grated
INSTRUCTIONS:
- Place the dried beans in a large bowl, cover them with cold water, and leave them to soak in the fridge for at least 8 hours or overnight.
- After soaking, drain the beans and place them in a large saucepan.
- Cover the beans with cold water and bring them to a boil.
- Boil vigorously for 10 minutes, skimming off any foam from the surface with a slotted spoon.
- Lower the heat, partially cover the pan, and simmer for about 1 hour or until the beans become tender.
- Drain the cooked beans and set them aside.
- 7. Heat the olive oil in the same pan over medium heat.
- Add the finely chopped celery, carrots, and onion.
- Cook, stirring occasionally, for about 5 minutes or until the vegetables become tender.
- Stir in the cooked beans.
- Add the canned diced tomatoes and their juice to the pan.
- Pour in the hot vegetable or chicken stock.
- Season the mixture with salt and freshly ground black pepper to taste.
- Bring the mixture to a boil, stirring continuously.
- Cover the pan with a lid and simmer for 20 minutes.
- 16. Introduce the small short-cut pasta into the simmering soup.
- Continue to simmer for an additional 10–15 minutes or until the pasta reaches the desired al dente texture.
- Stir in the chopped flat-leaf parsley and half of the finely grated Parmesan cheese.
- Adjust the seasoning as needed.
- Serve the Minestrone Soup hot, garnishing each bowl with the remaining Parmesan cheese.
