INGREDIENTS:

  • 2 cups of Cooked Quinoa
  • 4 Bell Peppers (Red, Yellow, or Orange)
  • 1 Small Yellow Onion, finely diced
  • 2 Garlic Cloves, minced
  • 1/2 pound of Ground Beef or Turkey
  • 1 teaspoon of Ground Cumin
  • 1 teaspoon of Chili Powder
  • 1/2 teaspoon of Garlic Powder
  • 1 cup of Frozen or Fresh Corn Kernels
  • 1/2 cup of Shredded Mexican Cheese Blend
  • Salt and Pepper to taste
  • Sour Cream, Lime Wedges, and Cilantro for garnish

 

INSTRUCTIONS:

Prepare the Quinoa and Filling:

  1. Cook the quinoa according to the package instructions and set it aside.
  2. Cut the tops off the bell peppers, removing the seeds and ribs from the inside, and set them aside.
  3. In a sauté pan, heat 1/2 tablespoon of oil over medium heat. Sauté the finely diced onions and minced garlic until they become tender, approximately 5 minutes. Transfer this mixture to a mixing bowl.
  4. In the same bowl, combine the sautéed onions and garlic with the ground beef or turkey, cooked quinoa, corn, ground cumin, chili powder, garlic powder, and season with salt and pepper to taste. Mix everything well.
  5. Add 1/2 cup of shredded Mexican cheese blend into the mixture and combine thoroughly.

Fill and Air Fry the Bell Peppers:

  1. Stuff each bell pepper with the mixture, ensuring they are generously filled.
  2. Place the stuffed bell peppers into the air fryer basket.
  3. Set the air fryer to the “meat” setting at 370°F (188°C) and cook until the internal temperature reaches 160°F (71°C), approximately 25 minutes.
  4. When there is a few minutes left, sprinkle the remaining shredded cheese on top of the stuffed bell peppers.
  5. For a perfect finishing touch, place the cheese-topped bell peppers back in the air fryer for 1 minute to melt the cheese.

Serve and Garnish:

  1. Once the cheese is melted and the stuffed bell peppers are cooked to perfection, remove them from the air fryer.
