Slow Cooker Chipotle Lime Steak Soup

PREP TIME: 10 minutes

COOK TIME: 4 to 8 hours

YIELD: 8 servings

INGREDIENTS:

  • 8 cups beef bone broth, homemade or store-bought
  • 1 cup diced onions
  • 1 green bell pepper, thinly sliced
  • 1 (16-ounce) jar salsa
  • ¼ cup diced pickled jalapeños
  • 1 chipotle chile pepper in adobo sauce, chopped
  • 2½ teaspoons fine sea salt
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon ground black pepper
  • 1 pound boneless beef roast, cut into 2-inch cubes
  • 2 limes, halved

 

FOR GARNISH (OPTIONAL)

  • Fresh cilantro
  • Shredded sharp cheddar cheese
  • Sour cream
  • Lime wedges

 

INSTRUCTIONS:

  1. Combine the broth, onions, bell pepper, salsa, jalapeños, chipotle pepper, salt, and spices in a slow cooker. Place the cubed beef on top of the other ingredients.
  2. Cover and cook on low for 8 hours or on high for 4 hours. When the beef is tender, shred the meat with 2 forks. Stir well. Squeeze the lime juice into the slow cooker. Taste and add more salt, if desired.
  3. Serve topped with fresh cilantro, cheddar cheese, sour cream, and a lime wedge, if desired.
  4. Store extras in an airtight container in the refrigerator for up to 3 days. Reheat in a saucepan over medium heat for a few minutes or until warmed through.
