Makes about 1½ cups | This topping, designed to showcase the texture of perfectly ripe strawberries, is chunky and light rather than thick and saucy. The optional balsamic vinegar gives it tang and depth.

Make this no more than a few hours ahead of time; any longer and the berries will start to become too mushy.

WAITING TIME: At least 20 minutes

 

INGREDIENTS:

  • 1 pint strawberries (2 cups), preferably organic
  • 2 to 3 tablespoons sugar
  • teaspoon pure vanilla extract or seeds from ½ vanilla bean
  • 1 teaspoon balsamic vinegar (optional)

 

INSTRUCTIONS:

  1. Trim and discard the tops of the berries, then quarter the berries lengthwise and transfer to a medium bowl. Sprinkle with the sugar (the amount needed will depend on the sweetness of the berries), vanilla, and balsamic (if using) and toss gently to combine.
  2. Let stand at least 20 minutes at room temperature to allow the sugar to dissolve. Serve chilled or at room temperature; the flavors will be stronger at room temperature.

 

MAKE IT YOUR OWN

  • Use blackberries or raspberries in place of strawberries (halve the blackberries; the raspberries can be left whole).
  • Substitute champagne vinegar for the balsamic vinegar.
