  • ¼ teaspoon salt
  • ½ cup half-and-half cream
  • 1 egg white, lightly beaten
  • Red and green sugar
  • Red-hot candies

 

PREPARATIONS:

  1. Cut the hard-cooked eggs in half lengthwise and remove the yolks. Press the yolks through a potato ricer or strainer into a small bowl.
  2. In a large bowl, cream the shortening and sugar until light and fluffy. Beat in the uncooked egg yolks, hard-cooked egg yolks, and almond extract. Combine the flour and salt, then add them to the creamed mixture alternately with the cream, beating well after each addition. Refrigerate the dough for 1 hour or until it becomes easy to handle.
  3. On a lightly floured surface, roll out the chilled dough to a thickness of ⅛ inch and cut it with a floured 2½-inch doughnut cutter. Reroll any dough scraps if desired.
  4. Place the cookies 1 inch apart on ungreased baking sheets and brush them with egg white. Sprinkle colored sugar on the cookies as desired. Bake them at 350°F for 6 minutes, then carefully decorate them with candies. Continue baking for 4-8 minutes longer or until the edges are lightly browned. Transfer the cookies to wire racks to cool.
