INGREDIENTS:

  • 2/3 cup (83 g) flour
  • ½ teaspoon pepper
  • 4 pounds (1.8 kg) beef short ribs
  • ¼ cup (60 ml) olive oil
  • 1 cup (160 g) chopped onion
  • 1½ cups (355 ml) lowsodium beef broth
  • ½ cup (120 ml) dry red wine
  • ¼ cup (60 g) brown sugar
  • ½ cup (140 g) chili sauce
  • ½ cup (120 g) lowsodium ketchup
  • ¼ cup (60 ml) Worcestershire sauce
  • 1½ teaspoons minced garlic

 

PREPARATION:

  1. Combine the flour and pepper in a plastic bag.
  2. Add the short ribs to the bag and shake to coat them with the seasoned flour mixture.
  3. Heat half of the olive oil in a skillet over medium-high heat.
  4. Brown half of the short ribs in the skillet and then transfer them to a slow cooker. Repeat with the remaining olive oil and short ribs.
  5. In the same skillet, combine the chopped onion, beef broth, red wine, brown sugar, chili sauce, ketchup, Worcestershire sauce, and minced garlic.
  6. Cook and scrape up the browned bits until the mixture comes to a boil.
  7. Pour the sauce mixture over the short ribs in the slow cooker.
