INGREDIENTS:

  • 1½ oz (45g) dried shiitake mushrooms
  • 1¼ cups (300ml) boiling water
  • 2½ cups (600ml) chicken stock
  • 2 boneless, skinless chicken breasts
  • 6 oz (175g) dried rice vermicelli
  • 3½ oz (100g) sweet corn kernels

 

INSTRUCTIONS:

Place the dried shiitake mushrooms in a heatproof bowl and pour in the boiling water. Let them stand for 30 minutes. Afterward, strain the soaking water into a large saucepan and add the chicken stock. Bring this mixture to a boil.

While the mushrooms are soaking, prepare the chicken. Slice the soaked mushrooms, and cut or shred the boneless, skinless chicken breasts into bite-size pieces or thin strips. Set them aside. Break the dried rice vermicelli into short lengths and stir them into the pan. Bring the mixture to a simmer and cook for 2 minutes.

Add the sliced mushrooms, chicken pieces, and sweet corn kernels to the pan. Bring it back to a boil and simmer for an additional 2 minutes, or until the chicken is thoroughly cooked and the vermicelli becomes tender.

Serve the Shiitake Chicken Noodle Soup in bowls while it’s hot, providing comfort and nourishment in every spoonful.
