  1. In the top of a double boiler or a large metal bowl that fits at least halfway into a pot, combine all the ingredients: sugar, egg whites, corn syrup, and 1/3 cup water.
  2. Fill the pot with about 2 inches of water and bring it to a boil.
  3. Using a hand-held electric mixer, begin mixing the egg mixture on high speed, combining the ingredients thoroughly.
  4. Place the bowl or double boiler over the boiling water, ensuring that the bottom of the bowl does not touch the water. Continue mixing the egg mixture with a stirring motion using the beaters.
  5. Beat the mixture until it becomes fluffy and white, which usually takes about 7 minutes.
  6. Remove the bowl or double boiler from the heat. If desired, add the optional vanilla extract and a pinch of salt.
  7. Continue beating the frosting until it cools down and holds stiff peaks.
