YIELD: 6 to 8 servings

 

INGREDIENTS:

  • 1 tbsp (8 g) cornstarch
  • 2 tbsp (30 ml) water
  • 3 tbsp (45 ml) pure (untoasted) sesame oil
  • 4 cloves garlic, peeled and minced, or 4 tsp (12 g) jarred minced garlic
  • ⅓ cup (80 ml) soy sauce (or tamari for gluten-free or coconut aminos for soy-free)
  • ⅓ cup (73 g) packed light brown sugar
  • 1 tbsp (15 ml) chili garlic sauce
  • 1 tbsp (15 ml) unseasoned rice vinegar
  • ½ tsp garlic powder
  • 1 (14-oz [396-g]) package rice noodles (use the thickness of your choice; any type will work)

 

FOR SERVING:

  • 2 green onions, thinly sliced
  • Sesame seeds

 

INSTRUCTIONS:

  1. In a small bowl, combine the cornstarch with the water. Set aside.
  2. In a large sauté pan, heat the sesame oil over medium-low heat. Stir in the garlic and cook for 30 seconds to 1 minute, or until fragrant.
  3. Stir in the soy sauce, brown sugar, chili garlic sauce, rice vinegar, and garlic powder. Increase the heat to medium-high and bring the mixture to a gentle boil, whisking constantly.
  4. Whisk in the cornstarch slurry. Lower the heat to low, bringing the mixture to a simmer. Let the sauce cook, whisking often, until it becomes thick and sticky, 3 to 5 minutes.
  5. Meanwhile, cook the rice noodles according to the package instructions. Drain and rinse in cold water.
  6. Stir the cooked noodles into the sauce.
  7. Serve the noodles topped with green onion and sesame seeds.
