FOR TRADITIONAL BARBECUE, CONTEMPORARY SMOKED FOOD, & GRILLED DISHES
A zippy, fresh salsa to enliven any beef bash. Serrano Pico de Gallo is a zesty and vibrant salsa that captures the essence of Mexican cuisine with its blend of fresh ingredients and bold flavors. This classic condiment is a staple in many Mexican dishes, known for its ability to elevate the taste of various foods, including beef.
Made with simple yet essential components, Serrano Pico de Gallo relies on the natural flavors of its ingredients. Plum tomatoes serve as the base, providing a juicy and slightly tangy backdrop. To add a kick of heat, fresh serrano chiles are minced and incorporated, giving the salsa its characteristic spiciness. A touch of minced white onion contributes a sharp and aromatic element, while chopped cilantro offers a fresh herbal note. The juice of a lime brightens up the flavors, enhancing the overall taste profile.
Preparing Serrano Pico de Gallo is a straightforward process. After dicing the tomatoes and finely mincing the serrano chiles, onion, and cilantro, all the ingredients are mixed together in a bowl. This allows the flavors to meld, creating a harmonious blend of tastes that highlight both the natural sweetness of the tomatoes and the fiery kick of the serrano chiles. The addition of kosher salt or coarse sea salt helps balance the flavors and brings out the nuances in the ingredients.
The salsa is then left to rest at room temperature for about 30 minutes, allowing the flavors to intensify and mingle. This short resting period transforms the individual elements into a cohesive and tantalizing mixture, ready to be paired with various cuts of beef or other dishes.
Whether served as a topping for grilled steak, a garnish for tacos, or a side dish for a hearty meal, Serrano Pico de Gallo adds a burst of flavor and a hint of heat to every bite. Its versatility and freshness make it a favorite among those who enjoy the bold flavors of Mexican cuisine, enhancing the dining experience with each spoonful.

- Juice of ½ lime
- ½ teaspoon kosher salt or coarse sea salt, or more to taste

VARIATIONS:
1. Mango Serrano Pico de Gallo: Add a tropical touch by incorporating diced ripe mango to the traditional Serrano Pico de Gallo. The sweetness of the mango balances the heat of the serrano chiles, creating a delightful contrast of flavors.
2. Avocado Serrano Pico de Gallo: Creamy avocado adds richness and a smooth texture to the salsa. Dice ripe avocado and gently fold it into the Serrano Pico de Gallo to create a luscious and satisfying variation.
3. Pineapple Serrano Pico de Gallo: For a burst of sweetness and acidity, add chunks of fresh pineapple to the salsa. The juicy pineapple complements the spiciness of the serrano chiles, resulting in a well-balanced and refreshing option.
4. Cucumber Serrano Pico de Gallo: Incorporate diced cucumber for a cool and crunchy element. This variation adds a refreshing and hydrating quality to the salsa, making it an ideal accompaniment for hot and spicy dishes.
5. Roasted Serrano Pico de Gallo: Roast the serrano chiles and tomatoes before dicing and mixing them with the other ingredients. Roasting imparts a smoky depth of flavor and a slightly charred taste, elevating the overall profile of the salsa.
