SERVES: 16

INGREDIENTS:

  • 1 cup Ensure® vanilla powder
  • 2½ cups all-purpose flour
  • 1 cup full cream milk
  • 1 cup Greek yoghurt
  • 40g butter, chopped

 

INSTRUCTIONS:

  1. Preheat oven to 200°C.
  2. Sift flour and Ensure® powder into a bowl. Rub in butter with fingertips.
  3. Make a well in the centre of the mixture and pour milk into well. Gently stir until well formed.
  4. Add Greek yoghurt and mix well.
  5. Remove dough onto a lightly floured surface and knead gently until smooth.
  6. Press dough into a 2cm-thick mound. Use a 5cm cookie cutter to cut out scones.
  7. Repeat until all dough has been cut. Place scones on baking tray lightly dusted with flour.
  8. Bake for 15 minutes or until lightly golden-brown.
  9. Serve with jam and whipped cream.
