INGREDIENTS:

 

Brussels Sprouts

  • 1½ tbsp (22 ml) olive oil, plus more for the pan
  • 5 cups (775 g) trimmed and halved Brussels sprouts

 

Balsamic Drizzle

  • 1 tsp cornstarch
  • 1½ tsp (7 ml) water
  • ¼ cup (60 ml) balsamic vinegar
  • 1 tbsp (15 ml) olive oil
  • 2 tbsp (25 g) granulated sugar

 

Bacon

  • 1 tbsp (15 ml) olive oil
  • 5 slices Tofu “Bacon” or store-bought alternative, chopped
  • 1 clove garlic, peeled and minced, or 1 tsp jarred minced garlic
  • ¼ tsp salt

 

 

INSTRUCTIONS:

 

Roast the Brussels Sprouts

  1. Preheat the oven to 400°F (200°C) and grease a large baking sheet with olive oil.
  2. In a large bowl, toss the Brussels sprouts with 1½ tbsp of olive oil to coat them evenly. Spread them out on the prepared baking sheet.
  3. Bake for 20 to 25 minutes or until the Brussels sprouts are fork-tender. Be sure to flip them halfway through the cooking time. The exact time may vary depending on the size of the Brussels sprouts.

 

Make the Balsamic Drizzle

  1. In a small bowl, create a slurry by combining the cornstarch and water. Set it aside.
  2. In a small saucepan, combine the balsamic vinegar, 1 tbsp of olive oil, and granulated sugar. Place the saucepan over medium heat.
  3. Bring the mixture to a gentle boil while whisking constantly. This allows the sugar to dissolve.
  4. Add the cornstarch slurry to the saucepan, whisking it in. Reduce the heat to low and let the mixture simmer, continuing to whisk, until it thickens. Once thickened, remove it from the heat and set it aside.

 

Finish and Serve

  1. In a large skillet, heat 1 tbsp of olive oil over medium-low heat.
  2. Add the chopped “bacon” and cook it, stirring occasionally, for 3 to 5 minutes, or until it becomes lightly crispy.
  3. Stir in the minced garlic and cook for an additional 30 seconds to 1 minute until it becomes fragrant.
  4. Reduce the heat to low and add the roasted Brussels sprouts and salt to the skillet.
  5. Drizzle the Brussels sprouts with the prepared balsamic drizzle, lightly stirring to coat them.
  6. Serve your delicious Brussels sprouts with balsamic drizzle and “bacon” immediately.
