INGREDIENTS:

  • ¾ pound snow peas, strings removed

INSTRUCTIONS:

  1. In a bowl, combine 1 teaspoon of oil, minced shallot, and lemon zest. In a separate bowl, combine ¼ teaspoon of salt, ⅛ teaspoon of pepper, and sugar.
  2. Heat the remaining 2 teaspoons of oil in a 12-inch nonstick skillet over high heat until it starts smoking. Add the snow peas and sprinkle them with the salt mixture. Cook without stirring for 30 seconds. Briefly stir and cook again without stirring for another 30 seconds. Continue cooking while stirring constantly until the snow peas are crisp-tender, which should take 1 to 2 minutes.
  3. Clear the center of the skillet, add the shallot mixture, and cook for about 30 seconds, mashing the mixture into the skillet until it becomes fragrant. Stir the shallot mixture into the snow peas. Stir in the lemon juice and minced parsley. Season with salt and pepper to taste.
  4. Transfer the sautéed snow peas with lemon and parsley to a serving bowl and serve immediately.

 

VARIATIONS:

  • Sautéed Snow Peas with Ginger, Garlic, and Scallion: Substitute minced garlic cloves, grated fresh ginger, and minced scallion whites for shallot and lemon zest. Use red pepper flakes instead of black pepper, rice vinegar instead of lemon juice, and sliced scallion greens instead of parsley.
  • Sautéed Snow Peas with Garlic, Cumin, and Cilantro: Add minced garlic cloves and lightly crushed cumin seeds to the shallot mixture. Use lime zest and juice instead of lemon and cilantro instead of parsley.
  • Sautéed Snow Peas with Shallot, Lemongrass, and Basil: Substitute minced fresh lemongrass for lemon zest, lime juice for lemon juice, and minced basil for parsley.
