SERVES 6

INGREDIENTS:

  • 1 pound broccoli raab, trimmed
  • 1 teaspoon salt
  • 1 cup water
  • 2 tablespoons olive oil
  • 2 cloves garlic, sliced
  • 2 shallots, sliced
  • Pepper, to taste

INSTRUCTIONS:

  1. Prepare the Broccoli Raab: Start by trimming the broccoli raab to remove any tough or woody stems. You’ll want to use the tender greens and thinner stems for this dish.
  2. Place the trimmed broccoli raab in a colander and rinse it thoroughly under cold running water.
  3. Blanch the Broccoli Raab: In a pressure cooker, combine the trimmed broccoli raab, 1 teaspoon of salt, and 1 cup of water.
  4. Lock the lid of the pressure cooker and bring it to low pressure. Maintain this low pressure for 2 minutes.
  5. Remove the pressure cooker from the heat and perform a quick pressure release. Carefully open the lid, and then drain the blanched broccoli raab. Transfer it to a bowl.
  6. Sauté the Broccoli Raab: In the cleaned pressure cooker or in a separate sauté pan, heat 2 tablespoons of olive oil over medium heat.
  7. Add the sliced garlic and shallots to the hot oil and sauté for about 1 minute, stirring often. Allow the aromatics to become fragrant and slightly tender.
  8. Combine and Sauté: Add the blanched broccoli raab to the sauté pan with the garlic and shallots. Continue to sauté for an additional minute, ensuring the broccoli raab is evenly coated with the olive oil mixture.
  9. Season the dish with freshly ground black pepper to taste. The slight bitterness of the broccoli raab pairs wonderfully with the savory garlic and shallots.
