INGREDIENTS:

  • 1 pound great northern beans
  • 6 cups chicken stock
  • 2 medium onions, chopped
  • 2 cloves garlic, minced
  • 6 cups diced cooked chicken
  • 1 cup salsa
  • 2 jalapeño peppers, seeded and diced
  • 2 chili peppers, diced
  • 1 ½ teaspoons oregano
  • 2 teaspoons cumin
  • ¼ teaspoon cayenne pepper
  • 1 tablespoon vegetable oil
  • Salt, to taste

 

 

INSTRUCTIONS:

  1. Soak the great northern beans in water overnight.
  2. The next day, drain the beans and add them to a large stock pot.
  3. Pour in the chicken stock and add half of the chopped onions and minced garlic to the pot.
  4. Simmer the mixture over medium heat for about 2 hours, stirring frequently, until the beans soften.
  5. Add the diced cooked chicken and salsa to the pot and continue simmering.
  6. In a separate skillet, heat the vegetable oil and sauté the diced jalapeño peppers, diced chili peppers, remaining chopped onions, minced garlic, oregano, cumin, and cayenne pepper for 3-4 minutes, until fragrant.
  7. Add the sautéed mixture to the chili pot along with salt to taste.
  8. Simmer the chili for an additional hour to allow the flavors to blend together.
  9. Adjust the seasoning with additional salt if needed.
